The first of the Very Small Batch series, 36 individually numbered bottles. bottled January 6, 2019. Limit of one bottle per customer.
Sherry, chocolate, raisin and plum flavours with a brettanomyces and warming alcohol character.
The first runnings for a recent brewing of Night were taken and boiled and hopped separately. Hopping is Fuggles and East Kent Goldings to 50 IBU. The cooled wort was divided into two portions. The main portion was fermented with the same two yeasts used in the main brew, to the smaller portion was added several litres each of aged stock ale (seven years) and triple stout (six years), both of which had been fermented with brettanomyces as well as saccharomyces. This smaller portion fermented slowly over the course of three weeks before being added back to the main portion to allow complete fermentation.
The beer is bottle conditioned and will mature in the bottle for some years to come.
