Description
First runnings brettanomyces cherry stout: three plus years in the making, wild and sour cherry stout. First runnings from a stout wort kit brew fermented in three parts with various strains of brettanomyces yeast along with wild yeast indigenous to the back corner of the brewery. Blended back and refermented with cherries.
The taste is softly tart and sour set against a complex swirl of flavours: the slight pineapple and musty woody flavours of the brettanomyces, the espresso coffee flavours of the stout and the cherry flavours in the background. The body is relatively light and the beer finishes with a gentle bitterness at the back of the palate.
A very small batch of 45 individually numbered bottles. The beer is 8.3% alcohol and bottle conditioned in 750 ml champagne bottles. It was bottled in December 2023 and is ready to drink now. It will keep for some years more. If cellaring, keep the bottle upright in a cool dark place. Serve cool.
